Characteristics

Using high sugar content variety Saishō Kaki, NOTO-SHIKA KOROGAKI has characteristics of rich sweetness, bright light-brown appearance, and complex yet soft texture. It is produced by employing traditional methods including hand kneading and gradual drying.

Link with the Production Area

Saishō Kaki variety was chosen to be cultivated in the geographical area during Meiji Period (about 130 years ago). The climate of the area is suitable for producing high sugar content persimmons and also the climate is ideal for drying process after the harvest.
