Characteristics

Iwadeyama Koridofu is a frozen tofu, and has a white color appearance and an uniform texture. It also has an elastic firmness and a smooth feeling on the tongue. Due to its unique production method, Iwadeyama Koridofu has less unfavorable taste and rich soy flavor, easily soaks up a broth, and maintains the firmness even if it is stewed. It is appreciated as an indispensable traditional ingredient in local cuisine.

Link with the Production Area

The production area is located in the east of Ou Mountains. It is exposed to dry and severe cold, but has less snow compared to the surrounding towns, and also the wind is not so strong. Therefore, the area is suitable for producing frozen tofu since tofu is vulnerable to humidity and strong wind. The production of frozen tofu has been a traditional industry of the area, and was recorded in the Meiji Period. At its peak period, there were 86 producers of frozen tofu (1960). Today, five producers produce approximately 100,000 bags (20 slices per one bag) of Iwadeyama Koridofu annually.
