Characteristics

Though classed as an odama (large fruit) variety, Kumamoto Shio Tomato fruit sizes are modest (weighing 30-150 g). High in sugars and free amino acids, the fruit is characterized by its sweetness (typical Brix is 8 or higher), thick flesh, and pleasantly firm skin. Because of these properties and its rarity, it is traded at three times or more of the unit price of commonly available odama varieties.

Link with the Production Area

Growing the tomato on reclaimed land with relatively high soil salinity contributes to its high sugar level because osmosis restricts the plant's absorption of water and nutrients. This limits the area of land it can be grown, however, and also requires close and frequent attention during growth.
