Characteristics

The Prosciutto di Parma is a ham made with selected hind legs of pigs, and is aged for more than a year using a pinch of salt during a dry-curing process. It is soft and has fragrant aroma. It is EU’s registered GI (PDO).

Link with the Production Area

The product is produced in a dairy area where quality of pork is obtainable. Moreover, surrounded by chestnut groves, the area has low humidity suitable for aging Prosciutto. Salts are also obtainable in this area - ideal conditions for the natural curing of high quality hams.
