Characteristics

Tokyo Shamo chicken is characterized by its well-developed muscles, pleasantly tight flesh, and satisfying bite, a meat quality close to pure line shamo, achieved by cross-breeding selectively-bred pure line shamo with Rhode Island red, and then cross-breeding the result again with pure line shamo, thereby obtaining offspring of 75% shamo lineage.

Tokyo Shamo is the result of selectively breeding shamo chicken raised in and around today's Tokyo since the Edo period (17C-19C). Breeding knowhow for obtaining birds with meat quality close to pure line shamo was established in 1982, and marketing commenced in 1984.
