Ibugarikko is daikon radish smoked and then pickled for a unique harmony of crunchy texture, toasty flavor, and sweetness intrinsic to daikon. Pickled foods made from smoked vegetables are rare not just in Japan but in the world as well. Ibugarikko has traditionally been produced in Akita Prefecture as a food for long-term preservation, eaten over the area's long snow-covered months. "Ibugarikko" is a local dialect for "smoked pickles." Community-wide efforts have perfected and preserved the fine art of smoking whole daikons evenly by adjusting the intensity of the heat according to the quality of the daikon, ambient temperatures, humidity levels, and other conditions.Contact
