Characteristics
Ono Asari is a variety of clam notable for its large size. Shell sizes are typically 35 mm long or more, some over 45 mm. The flesh is thick, plump, strong in umami, and produces excellently rich-tasting broth. It requires minimal purging and the quality is consistent. It is traded at high prices reflecting its high rating by users as a cooking ingredient that complements any dish both visually and taste-wise.Link with the Production Area
The quiet waters of Onoseto Strait are favorable for the growth of bivalves with superior qualities. This is because phytoplankton (microalgae), which feed the clams, are in constant supply, thanks to tidal flows from Seto, and inflows of subsoil water and river water from the lush woodlands of Miyajima. Local measures are in place whereby only clams sufficiently large are shipped. This involves a unique method of dividing tideland into plots of shellfishing grounds, which are each allocated to and managed by a producer.Contact
