RECIPE
Ingredients (for 10 people)
- soybeans 1/2 cup
- burdock root 1/4
- fried tofu (fried sushi size) 1 slice
- eggplant 1/2
- carrot 1/5
- pumpkin 100–150g
- miso 100g
- water 1000ml
- yard beans 50g
How to cook

1. Soak the soybeans in water the day before. On the cooking day, boil them until they’re about 80% soft.

2. Cut the other vegetables into suitably small pieces. (For vegetables that need to have the bitterness removed, that must be done first.)

3. Put the soybeans, vegetables, and fried tofu into the pot, starting with the hardest ingredients. Once they become soft, dissolve the miso in the pot, check the flavor and turn off the heat.

As for the ingredients, it’s best if there are 7 types of ingredients you can get at the time, such as edamame, taro stem, green onion, vegetable thinnings, and so on.
