Kyuuri no Hiya-Jiru (cold soup of cucumber) | Our Regional Cuisines

RECIPE
Ingredients (4 servings)
- Mixed miso 60g
- White Sesame seeds 2 tbsp.
- Cucumber 2
- Ni-Dashi-jiru(=Japanese soup stock) 1200 ml
How to cook

1. Put roasted Sesame seeds in a mortar and grinder and mix well.

2. Mix the appropriately amount of mixed Miso for making Miso soup with the Sesame seeds.

3. Cut the chilled Cucumber from the refrigerator, into 3mm round slices, add them to the Miso paste and Sesame paste mixture, and mix them together.

4. When the Cucumbers are lightly wilted, add the cold Broth. You may sprinkle chopped Green onions or shredded Green Perilla leaves. The aroma will be more appetizing.
