Oroshi-soba (Soba Noodles with grated daikon) | Our Regional Cuisines

RECIPE

Ingredients (4 servings)

  • Raw Buckwheat Noodles 4
  • Daikon radish 400g
  • Dashi (=Japanese soup stock) 3 cups
  • Sake 1 1/3 tbsp.
  • Mirin(=sweet rice wine) 1 1/3 tbsp.
  • Light soy sauce less than 3 tbsp.
  • Chopped Green Onion 20g
  • Hana-Katsuo(Bonito flake) 8g

How to cook

  • 1. Bring soup stock to a boil in a pot and add Sake, Soy sauce, and Mirin to make a Dipping Sauce for Soba.

  • 2. Boil Soba in plenty of water, drain, and place in a warmed bowl. (Wash the water thoroughly to remove any sliminess before cooling.)

  • 3. Dipping Garnish with Green onions and Dried Bonito. Sprinkle with Chili Pepper to taste.

  • 4. In addition to pour the Dashi over the grated Daikon, there are three other ways to eat it: pour the Daikon and Dashi separately, or pour the squeezed juice of the Daikon and the Dashi together.
