RECIPE

Ingredients (5-6 servings)

  • Jigona(All purpose Flour) 5 cups
  • Salt 1 tsp.
  • Warm Water (or regular water) 1.5 cups
  • Dusting Flour (Wheat Flour) a little
  • [Sweet Red Bean Paste] Azuki Beans(=Red beans) 100g
  • [Sweet Red Bean Paste] Sugar 130g
  • [Sweet Red Bean Paste] Salt 1 tsp.
  • [Sesame] Roasted Sesame Seeds 5 tbsp.
  • [Sesame] Sugar 3 tbsp.
  • [Sesame] Soy Sauce 1 tsp.
  • [Kinako(=Roasted soybean flour)] Kinako(=Roasted soybean flour) 5 tbsp.
  • [Kinako(=Roasted soybean flour)] Sugar 5 tbsp.
  • [Kinako(=Roasted soybean flour)] Salt a little

How to cook

  • 1. Add salt to the whole wheat flour, knead well with warm water, cover with a damp cloth, and let it rest for 30 minutes.

  • 2. Use wheat flour for dusting, roll out the dough from step 1 to a thickness of 2-3 mm, and cut it into 1cm wide strips.

  • 3. Boil water in a pot, cook the strips from step 2, cool them, and drain them in a colander.

  • 4. [Sweet Red Bean Paste]
    Soak azuki beans in water for a day, boil until soft, add sugar and salt to make sweet red bean paste, and mix it with the boiled houtou.

  • 5. [Sesame]
    Grind sesame seeds, season with sugar and soy sauce, and mix with the houtou.

  • 6. [Kinako(=Roasted soybean flour)]
    Season with sugar and salt, and mix with the houtou.
