Ingredients (For 3-4 persons)
- tofu 1 piece
- Ume vinegar 5 cups
How to cook

1. Cut cotton (momen) tofu into 1/4-thick slices, lay a cotton cloth on a piece of newspaper (kitchen paper), place the tofu on the cloth, then the cloth, then the newspaper (kitchen paper), and repeat the process, placing a weight on a cutting board, and leave to drain for 1 to 2 hours.
