Yakiayu no kanroni | Our Regional Cuisines

RECIPE

Ingredients (12 peaces)

  • Ayu (Frozen Ayu) 1kg (12 fish)
  • [Seasoning A] Soy sauce 150 - 200 ml (ratio of nectar 03時07分)
  • [Seasoning A] Roughly chopped 250g
  • [Seasoning A] Mirin 50ml
  • [Seasoning A] Water 1500~2000ml

How to cook

  • 1. Clean ayu of surface slime and grill ayu over charcoal.

  • 2. Lay the ayu flat in a pot and add seasoning A.

  • 3. Cook on high heat for about 30 minutes from the beginning, and then on low heat for 4 to 5 hours.
    (Pour the cooking liquid over the ayu to soak up all the flavor.)

  • 4. After cooking, leave the rice in the same state for a while until it cools down (it will lose its shape when it is hot). (The shape of the fish tends to fall apart while it is still hot.)
