Dengara (Leaf Wrapped Rice Cake) | Our Regional Cuisines

RECIPE

Ingredients (15 pieces)

  • Rice flour 500g
  • Hot water As needed
  • Salt 2.5g
  • Azuki beans(Red bean) 1 cup
  • Hot Water (for azuki beans) As needed
  • Sugar (for azuki beans) 200g
  • Salt (for azuki beans) 4g
  • Ho leaves As needed
  • Artemisia princeps(Japanese mugwort) As needed

How to cook

  • 1. Prepare the ho leaves with branches attached and soak them in hot water.

  • 2. Boil the azuki beans once, drain, and add water again then simmer until softened. Add sugar and salt, and knead into sweet bean paste. Once it cools, shape the paste into small balls.

  • 3. Add salt to the rice flour and knead well with hot water until it reaches a firm, earlobe-like consistency.

  • 4. Take an appropriate amount of the mixture from step 3, place a ball of sweet bean paste inside, shape it into a rectangular form, wrap it with the ho leaf (keeping the branch attached), and tie it with Japanese mugwort. Steam in a steamer.
