Sanma no Kigaki | Our Regional Cuisines
RECIPE
Ingredients (4 servings)
- Sanma(pacific saury) 3
- Daikon radish 400 g
- Green onion 1
- Soy sauce 2 1/2 tbsp.
How to cook

1. Head and gut the Sanma(pacific saury) and rinse in cold water.

2. Peel and grate the Daikon radish, place in a pan with the juice, arrange the Sanma(pacific saury) on top and heat.

3. When the Sanma(pacific saury) is cooked, remove the meat from the bones by squeezing it with your hands from the tail end and give it a quick stir. Sprinkle with Soy sauce and cook until the Daikon radish is tender. Add the diagonally sliced Green onions when grating and turn off the heat.
