Botamochi (Japanese Confectionary Made with Rice and Bean Paste) | Our Regional Cuisines

RECIPE

Ingredients (30 pieces)

  • Glutinous rice 1 cup (150g)
  • Short-grain rice 2 cups (300g)
  • Water 3 cups
  • [Azuki bean paste] Raw bean paste 400g
  • [Azuki bean paste] Sugar 200 to 280g
  • [Azuki bean paste] Water 160ml
  • [Azuki bean paste] Salt A little

How to cook

  • 1. Wash the glutinous rice and short-grain rice together. Measure water to match the amount of the rice and soak the rice for about 1 hour before cooking it.

  • 2. Make the azuki bean paste. Put sugar and water in a pan and simmer. Add half of the bean paste to the pan and mix well. After that, add the remaining half of the bean paste and mix again. Add the salt.

  • 3. Place the rice in a box and spread the azuki bean paste on top.

  • 4. When making barrel shapes with the rice, use plastic wrap to mold the rice into that shape. Spread some azuki bean paste on the plastic wrap and place the rice on top. Wrap the plastic wrap around the rice to put the paste onto the rice.
