RECIPE
Ingredients (4 servings)
- Eggplants 8 (about 300g)
- Abura-fu 1/2
- Vegetable oil 2 tbsp.
- Dashi (=Japanese soup stock) 3 tbsp.
- Soy source 2 1/2 tbsp.
- Mirin (Sweet rice wine) 2 tbsp.
- Sake 1 tbsp.
- Katakuriko(=potato starch) 2 tsp.
- Water 2 tsp.
- Chili powder a little
How to cook

1. Cut eggplant into small pieces and soak in water to remove the scum.

2. Cut Abura-fu into 1 cm pieces. (Instead of Abrura-fu, shredded deep-fried bean curd may be added. Shredded onion and green shiso (Japanese basil) can also be added.)

3. Heat vegetable oil in a pan, stir fry 1 and 2.

4. When 3 becomes soft, add Dashi (Japanese soup stock), soy sauce, mirin and sake, and finally thicken with Katakuriko (potato starch).

5. Sprinkle with chili pepper to taste.
