Tsugi-jiru (Tofu Soup) | Our Regional Cuisines
RECIPE
Ingredients (2 servings)
- Dashi (=Japanese soup stock) (dried shiitake mushrooms are the best to add ) packet or granulated can be used
- Water 350 ml
- Red pepper 2
- [A] Soy sauce 2 tbsp.
- [A] Sake 2 tbsp.
- [A] Sugar A little
- [A] Tofu About 1/4 tofu
- [A] Wakame seaweed As much as you like
- [A] Fu (=wheat gluten) As much as you like
How to cook

1. Add dashi (=Japanese soup stock) to water in a pot. (It is good to let it sit for a few hours).

2. Roast the dried red pepper a little, break it in half and put it in a tea packet and simmer for about 3-5 minutes.

3. If it tastes spicy, add [A] and bring to a boil.

4. If the taste is not enough, add more soy sauce (not included in the quantity) to taste.
