Kuri Gohan(=Chestnut rice) | Our Regional Cuisines

RECIPE

Ingredients (6 servings)

  • Rice 3 cups
  • Peeled chestnut 15
  • Kombu(=kelp) 5cm square
  • Sake 3 tbsp.
  • Salt 1 1/2 tsp.
  • Water 3 1/3 cups
  • Black sesame seeds A little

How to cook

  • 1. After peeling off the outer shells and inner skins from the chestnuts, immediately soak them in water, changing the water until it becomes clear.

  • 2. Wash rice and drain in a colander 30 minutes before cooking.

  • 3. Combine rice, water, kombu for dashi, salt, and sake. Add peeled chestnuts and cook.

  • 4. When it's finished, serve it in a dish and sprinkle black sesame seeds on top.
