Shiki Shiki | Our Regional Cuisines

RECIPE

Ingredients (3~4 servings)

  • Green pea (raw) 240g (100g if you use dried green pea)
  • Sugar 80g
  • Water (for green pea paste) As needed
  • Wheat flour 100g
  • Sugar 1 tbsp.
  • Egg 2
  • Salt A pinch
  • Water (for dough) 100ml
  • Vegetable oil As needed

How to cook

  • 1. [Green pea paste Process 1]
    Boil green peas until they become tender, then place onto a strainer to drain hot water. (Add 1g of baking soda to make peas soft when you use dried green peas.)

  • 2. [Green pea paste Process 2]
    Keep the hot water boiled peas.

  • 3. [Green pea paste Process 3]
    Put drained green peas into a mixer, and mash them until it becomes thick liquid while adding hot water 2 little by little.

  • 4. [Green pea paste Process 4]
    Put the mashed green peas from [Green pea paste Process 3] into a pan and add sugar. Heat with low heat and simmer to reduce liquid while stirring.

  • 5. [Dough Process 1]
    Add water, egg, sugar and salt into wheat flour, and mix them until the dough becomes smoother than tempura dough. (Mix water just before grilling dough. If the dough is left a while after mixing flour and water, it gets sticky and cannot be placed thinly.)

  • 6. [Dough Process 1]
    Heat a flat pan with low heat and put oil. Place dough thinly. Once grilled, place bean paste in the center of dough. Fold the dough into half, then flip it. Grill the other side and serve.
