Ingredients
- Sashimi-grade Chicken (thigh, tender, breast) 150g
- Onion 30g
- Japanese leek (finely chopped) 5g
- Ginger (grated) To taste
- Garlic (grated) To taste
- Green Shiso To taste
How to cook

1. Prepare fresh chicken for Sashimi.

2. Burn the skin with a burner, etc., and turn off the heat when the surface changes color (the inside is still raw).

3. Cut the meat into 3 mm wide from the skin, looking in the direction of the meat fibers to break them.

4. Place Green Shiso leaves as a base and arrange each part of the chicken. Slice the onions, cut the green onions into small pieces. Grate the ginger and garlic and arrange them together. Enjoy with soy sauce or Pon-zu according to your preference.
