Yuzu Miso | Our Regional Cuisines

RECIPE
Ingredients (enough to last)
- [A] Yuzu peel 500g
- [A] Sugar 300g
- [B] Miso 1kg
- [B] Sugar 200g
- [B] "Mizuame" (=sweetener) 100g
- [B] Yuzu juice As needed
How to cook

1. Cut the yuzu peel into 2cm widths.

2. Add the strips of yuzu peel from step 1 into a pot and add enough water so that the yuzu peel is completely covered. Simmer for 15 to 20 minutes. Soak in plenty of cold water to remove any scum.

3. Add the yuzu peel and sugar from [A] into a saucepan and simmer.

4. Add [B] to the ingredients in step 3 and simmer on a low heat. When the mixture starts to become shiny, add yuzu juice and turn off the heat.
