Donko-jiru (Dark sleeper Soup) | Our Regional Cuisines
RECIPE
Ingredients (4 servings)
- Donko 1
- Daikon radish 1/2
- Napa cabbage 2-3 leaves
- Carrot 1
- Japanese leek 1
- Miso 3~4 tbsp.
- Water 6-7 cups
How to cook

1. [Preparation] Remove scales from "donko". Cut its belly and take its guts, then rinse. Wipe off water and chop it.

2. [Preparation]Chop Japanese leek into about 2cm (0.8 inch) of length.

3. [Preparation] Tanzaku-cut other vegetables.

4. Pour water into a pot, and add in order of daikon radish, carrot and napa cabbage to simmer until they become tender.

5. Add "donko" to 4 and simmer further.

6. Add miso dissolved with water slowly for flavor. Add Japanese leek and simmer lightly to serve.
