Yatsugashira-no-itameni (Stir fried Taro Stalk) | Our Regional Cuisines

RECIPE

Ingredients (4 servings)

  • Dried yatsugashira stems (soaked in water and rehydrated) 500g
  • Vegetable Oil 100cc
  • Sugar 60g
  • Soy sauce 120cc
  • Mirin(=sweet rice wine) 50cc

How to cook

  • 1. Cut dried yatsukashira stems into 3 cm (1 inch) lengths with scissors, soak in water and rinse well, changing the water halfway through the process, for a total of 6 hours to remove the scum.

  • 2. Squeeze the water out of the dried yatsukashira stems and fry them in a pan with oil.

  • 3. Season to taste with sugar, soy sauce, and mirin(=sweet rice wine), and saute further.

  • 4. Cover with a lid and steam until the water evaporates.
