Hyugadon (Rice Bowl with Marinated Tuna Sashimi) | Our Regional Cuisines
RECIPE
Ingredients (5 servings)
- Rice 450g
- Maguro (=tuna) 2 fillets
- Toasted sesame seeds 20g
- Soy sauce 40cc
- Sugar 30g
- Mirin (=sweet rice wine) A little
- Sake A little
- Egg yolk 1
- Green onion A little
How to cook

1. Grind the toasted sesame seeds well and add the sugar. Grind some more.

2. Add the egg yolk.

3. Add the sake, mirin (=sweet rice wine), and soy sauce and grind some more to complete the sauce.

4. Cut the maguro (=tuna) into thin slices.

5. Add the maguro (=tuna) and finely chopped green onions to the sauce from step 3.

6. Place the ingredients from step 5 onto a bowl of hot rice and add some more chopped green onions.
