Yan-gome (Roasted Azuki Rice) | Our Regional Cuisines

RECIPE

Ingredients (5 servings)

  • Short-grain rice 3 cup
  • Red beans 2 cup
  • Sugar 2 cup
  • Salt A little
  • Water 7 cup (including the boiled water of red beans)

How to cook

  • 1. Wash rice and drain.

  • 2. Fill a wooden tub with plenty of hot water (about 40 degrees Celsius), put the washed rice in the tub, and cover it overnight.

  • 3. The next day, lift the rice with a sieve, and once again, pour 40-degree hot water into the tub and soak the rice for 3 to 4 hours.

  • 4. Drain the water well, add oil to the pan, stir-fry, and cool the well-stirred rice.

  • 5. Boil the red beans well, make plenty of sweet soup with a moderate sweetness by adding sugar. Add the well-stirred rice into this mixture, let it steam on low heat for about 20 minutes, and you'll have a fluffy and fragrant "Yan-gome."
