Kanzarashi (Sweet glutinous rice flour dumplings) | Our Regional Cuisines

RECIPE

Ingredients (2 servings)

  • Shiratamako (=glutinous rice flour) 60g
  • Water As needed
  • [Syrup] Granulated sugar 50g
  • [Syrup] Sugar 9g
  • [Syrup] Light soy sauce A little
  • [Syrup] Salt A little
  • [Syrup] Water 200cc

How to cook

  • 1. Put the ingredients for [syrup] in a saucepan and heat until it comes to a boil, then let it cool.

  • 2. Add water to Shiratamako (=glutinous rice flour) and knead to the consistency of an earlobe.

  • 3. Boil water in a pot, then add small, round balls of Shiratama dumplings into the boiling water and cook.

  • 4. When dumplings float to the surface, boil for 1 minute, then remove to cold water to cool.

  • 5. Float the Shiratama dumplings from step 4 in the syrup made in step 1.
    If the syrup is too sweet, use water or ice to sweeten to your liking.
