RECIPE
Ingredients (5-6 portions)
- Tobiuo (flying fish) (Net weight) 150g
- FIrm tofu 100g
- Ginger 8g
- Egg 1/2
- Vegetable oil As needed
- [Seasoning A] Salt 2.5g
- [Seasoning A] Soy sauce 18g
- [Seasoning A] Miso 9g
- [Seasoning A] Mirin(=sweet rice wine) 18g
- [Seasoning A] Sugar 30g
How to cook

1. Fillet a fish into 3 pieces, remove bones, scrape and lightly pound them on a cutting board.

2. Wrap fiirm tofu in a dish towel and squeeze out the excess water.

3. Finely mince ginger.

4. Place the tofu at Step 2 in a mortar and pestle and grind well, then add the fish and grind further. Add beaten eggs and seasoning A to flavor.

5. Fry slowly in slightly lower than medium temperature oil to desired shape.

6. Adding favorite vegetables such as Gobou(=Burdock root) and chinese chive is also good.
