Nerikuri, Nettabo, Imo-mochi (Sweet Potato and Mochi Dumpling) | Our Regional Cuisines

RECIPE

Ingredients (for about 40 servings)

  • Sweet potatoes 3 kg (net)
  • Glutinous rice 1.5kg
  • Kinako (Roasted soybean flour) 1 large bag
  • [Seasoning A] White sugar 1kg
  • [Seasoning A] Salt 1 tbsp.

How to cook

  • 1. Wash and soak glutinous rice in water. (Soak the glutinous rice in water about 10 hours).

  • 2. Peel sweet potatoes, cut them into pieces, and soak them in water to remove the scum.

  • 3. Steam the drained glutinous rice and sweet potato.

  • 4. The steamed glutinous rice is pounded with a rice-cake pounding machine.

  • 5. When the glutinous rice is finished pounding, put the steamed sweet potatoes into the glutinous rice.

  • 6. Add seasoning A to the step 5 and pound again.

  • 7. Pour the mixture into a mold lined with Kinako (Roasted soybean flour), cut into desired size, and sprinkle the top with Kinako (Roasted soybean flour).
